Pork Chops and Apple Sauce with Chris Knight

On this episode, I’m in the kitchen with my Uncle Christopher Knight. While I know him at “Uncle Chris” the rest of the world knows him as Peter Brady from the Brady Bunch! One of his famous lines from the Brady Bunch is the phrase, “pork chops and apple sauce.” So in this episode, we get in the kitchen and make our spin on this iconic catchphrase.

Pork Chops and Apple Sauce with Chris Knight

Ingredients

  • Pork Chops
  • 1 tbsp Salt

  • 1 tbsp pepper

  • 1 tsp red pepper

  • 8-10 cloves of garlic (1 bulb)

  • 4 pork chops, about an inch thick

  • 2 tbsp extra virgin olive oil

  • Apple Sauce
  • 5 lbs apples

  • Juice from 1 lemon

  • 1 cinnamon stick

Directions

  • Pork Chops
  • Preheat oven to 425 degrees.
  • Mix the salt, pepper and red pepper together. Pat each pork chop dry with a paper towel and generously season both sides of each pork chop.
  • In a large oven safe sauté pan or skillet, heat olive oil over high heat. Add the pork chops and cook on each side until seared, about 3 minutes each side.
  • Cook the pork chops in the oven until done, about 8 minutes. Take out of oven and let rest for 8 minutes.
  • While the chops are in the oven, puree garlic in a food processor or blender until smooth.
  • Top each pork chop with roughly 1 tbsp (or less depending on your taste) of the pureed garlic to each pork chop and spread to cover the entire chop.
  • Enjoy!
  • Apple Sauce
  • Peel and core the apples. Dice into large pieces.
  • Add apples, the juice of the lemon, and the cinnamon stick to a heavy bottomed dutch oven. Cook over a medium low heat until apples are broken down can be easily mashed with the back of a wooden spoon, about 40 minutes. Check periodically to stir and make sure the apples at the bottom are not overly browning or burning.
  • Discard cinnamon stick and enjoy!
